Recipe from the book Sweet Gratitude:

Chocolate Pecan Crust:

1/2 c. pecans

2 ounces cacao powder (weight)

1/3c. cacao nibs

4 ounce date paste

1 tablespoon liquid vanilla

1/8 teaspoon salt

**process all ingredients in a food processor until the crust starts to rise on the sides, scrape down with spatula. Repeat a few times until the nuts are well broken down. The mixture should hold together with a gentle press and can be broken apart with a clean break. Shape to spring form cheesecake pan (10”) with the bottom part upwards ( much easier to serve). Lightly grease entire inside of pan with coconut oil. Distribute crust evenly on the bottom & lightly compact by hand. Set aside.

Chocolate Banana Filling:

2c. soaked cashews

2c. banana (2-3 ripe bananas)

2Tb. lemon juice

3/4c. agave/maple syrup

2Tb. liquid vanilla

1/8 teaspoon salt

1c. alternative milk (coconut,almond,soy)

3Tb. lecithin

1c. coconut oil (melted)

Chocolate filling:

1 ounce cacao powder

1Tb. liquid vanilla

**Place all ingredients into blender, mix well, scraping down the sides a few times.  Should mix for roughly 5 minutes until its a nice creamy consistency. Pour 3/4 of creamy banana  into pie plate, leaving some in blender for chocolate swirl. Add the remainder ingredients (cacao & vanilla) Make sure its well incorporated. Pour over creamy part gently, use a toothpick to make the marble swirl. Freeze for 2 hours then serve !!
